    As the great Aaron Franklin likes to say, "If you're lookin', you ain't cookin."
    For real, these might turn out great but there's just way, way, way too much opening the pit. Gotta open the pit to rotate the ribs. Gotta open the pit to rotate the wood chip packet. Open the pit to change out the wood chip packet. Every time you do that you let out all the heat. Get a smoker if you're considering smoking meat regularly.

      careful with high heat! i did this and the foil packet caught on fire and burned in 20 min instead of slowly burning haha

    Andrew: looks amazing! I will say, adding just a tbsp or two of honey to that mix (minus some molasses for it) seems to bring in more of the smoky flavor in. If you haven't yet, you should try smoking some riesling marinated salmon with Pecan wood. An alder and oak mix is good too. If you cant tell..I have no life and also have an electric smoker... Cold smoked salmon is my current obsession.

    Smoking with a gas grill is fine. Smoking with an electric pellet smoker is punishable by death. It's like spitting in to the eye of tradition. No skill or experience needed. Also, the membrane on the ribs crisps up.
